Inside the story: The Secret Is Out. The Secret Kitchen Makes Its American Debut in Schaumburg
The Secret Kitchen Chef/Founder Aanal Kotak opens first USA restaurant in Schaumburg
The Secret Kitchen — the Indian saga, Celebrity Chef Aanal Kotak's internationally acclaimed Modern Indian fine-dining restaurant — is now open at 1411 W. Schaumburg Rd. in Schaumburg, Illinois, marking the concept's first location in the United States. Already celebrated across locations in India, Australia, and Canada, The Secret Kitchen arrives in the Chicago suburbs as a fully realized, road-tested culinary destination rooted in the traditions of India's royal kitchens and reimagined for the contemporary table.
The Schaumburg location brings a distinctive proposition to the region's dining scene: royal Indian cuisine, reconstructed from historical sources and built on spice blends that Chef Kotak handcrafts herself. The menu serves vegetarian, vegan, and non-vegetarian diners alike, with dishes priced from $1.99 to $39.99.
“The Secret Kitchen’s roots are inspired by my grandmothers, who excelled at royal Indian cooking. It’s about time that the world experiences this side of exquisite Indian cuisine with a modern touch.” — Chef Aanal Kotak

A SELF-MADE LEGEND Chef Kotak’s culinary career began at age twelve in Ahmedabad, India, when a family gathering of fifty suddenly had no caterer — and she stepped into the kitchen and cooked for all of them. She has not really stopped since. By nineteen, she had won Gujarat’s Youngest Cooking Expert competition and launched what would become one of India’s most recognized fine dining brands.
Kotak has been named Restaurateur of the Year (2022) and Woman Chef of the Year (2021) by the Food Connoisseurs India Convention (FCIC), India’s largest food and beverage industry honors. She was recognized as Chefpreneur of the Year at the India Business Awards (2018) and named to the Entrepreneur India 35 Under 35 list in 2024. She has appeared as a guest judge on MasterChef India, produced by Endemol Shine India for Star Plus, and holds two records with the India Book of Records.
Her acknowledged culinary hero is Michelin three-star French chef Alain Passard.
In addition to her restaurants — which now span multiple brands, including The Secret Kitchen, Akshada, Southak, and The Baking Couture — Kotak operates a retail line of handmade spices, ready-to-cook mixtures, and bakery premixes, and leads Swabhiman Abhiyan, a mentorship and financial support initiative for aspiring women in the culinary field.
Kotak handcrafts every spice blend used across her restaurants. The flavor in every plate at The Secret Kitchen is traceable back to a mortar, a petal, a decision made by hand.
THE SPACE: ROYAL HERITAGE, MAXIMALIST VISION The Schaumburg dining room does not arrive quietly. The jewel-green marble foyer introduces guests to a floor-to-ceiling hand-carved wood bas-relief mural — gnarled trees, layered canopies, and flowering botanicals sculpted in three dimensions that cover every wall of the entry. At its center stands the restaurant’s signature object: a throne chair in polished gold, its back rising into teal-stained-glass butterfly wings traced in brass filigree. It is positioned, knowingly, for photographs — but the backdrop is worthy of every photograph.

The main dining room features crimson velvet seating with brass-trimmed bases, sage-green origami lotus ceiling panels radiating in sunburst formations, and a brass-and-emerald-glass room divider that casts green-tinted light across every surface. The bar is anchored by a backlit white onyx countertop — glowing with a near-lunar luminosity — its face covered entirely in handmade flamingo mosaic tile: individual tesserae placed by hand, depicting flamingos wading through a tropical jungle in deep teal, coral-orange, and rose-pink. Flamingos recur throughout the space as a design motif, as neon wall sculptures, three-dimensional art pieces, and figures along the divider shelf.

THE MENU: ANCIENT KITCHENS, CONTEMPORARY PLATES The Secret Kitchen’s menu is organized in narrative chapters — The First Plate, The Main Plate, The Comfort Plate, The Dessert Bar — a sequencing that suggests a story unfolding rather than an order being placed.
Signature offerings at the Schaumburg location include:
Avocado Dahi Puri — Crispy puri shells filled with cool avocado, chilled yogurt, and house-made chutneys; a modern reimagining of the beloved chaat tradition
Thecha Paneer Tikka (Chef Special) — Cottage cheese in a bold green chili, garlic, peanut, and fresh coriander marinade, finished in the tandoor
Tandoor ke Phool — Cauliflower and broccoli with spicy garlic, cashew, and fresh mint, finished in clarified butter
Ragda Fondue Samosa Chaat — A signature chaat presentation that showcases Chef Kotak’s inventive approach to Indian street food
#TSKfied Butter Chicken Delhi Style — Chef Kotak’s continent-tested, refined take on a beloved classic
Nalli Gosht Ki Nihari and Mutton Rogan Josh — Slow-cooked preparations rooted in Himalayan and Mughal culinary traditions
Gulab Jamun Flambé (Chef Special) — The classic Indian sweet transformed tableside by fire
Kesar Mango Rasmalai — Chilled and saffron-soaked, crowned with dry fruits
“Each dish is a tribute to its origin — meticulously crafted and presented with refined elegance.” — Chef Aanal Kotak
