At a glance: Eataly Chicago Announces New Carbonara Program

Eataly is introducing a new Carbonara program for its signature restaurant outlets: La Pizza & La Pasta and Eataly Ristorante. With just five simple ingredients needed for the classic Roman dish, Eataly will celebrate Carbonara while also paying tribute to seasonality and regionality – with five distinct recipes to discover.  

From now until May 28, Eataly is embracing the idea that “all roads lead to Carbonara” through its limited-time menu with favorites hailing from the Eternal City, weekly communal dining events, and hands-on cooking classes and demonstrations.  

THE MENU 

Balancing the unexpected with tradition, the menu features different interpretations of iconic Roman dishes - from the five variations of Carbonara to Supplì, Carciofo Fritto, and more: 

THE CARBONARA 

  • Classica (Housemade Mezzi Paccheri, San Carlo Guanciale, Eggs, Granarolo Pecorino Roman DOP, Black Pepper)
  • Tartufo (Housemade Mezzi Paccheri, Eggs, San Carlo Guanciale, Urbani Black Truffle, Granarolo Pecorino Roman DOP, Black Pepper)
  • Asparagi (Housemade Mezzi Paccheri, Eggs, Crispy Asparagus, Granarolo Pecorino Roman DOP, Black Pepper)
  • Seafood (Housemade Mezzi Paccheri, Eggs, San Carlo Guanciale, Wild Gulf Shrimp, Lemon Zest, Black Pepper)
  • Orto (Housemade Mezzi Paccheri, Eggs, Artichoke, Sardinian Caviar ‘Bottarga’, Black Pepper) 

Additional menu highlights include: 

  • Supplì Tasting (A Supplì Trio of Cacio e Pepe, Pomodoro e Mozzarella, and Amatriciana)
  • Carciofo Fritto (Fried Artichoke with Choice of Classic, Cacio e Pepe, or alla Carbonara Preparations)
  • Pizza Romana by Rossopomodoro (Margherita, Cacio, Pepe & Guanciale, Capricciosa, Cicoria & Salsiccia, and La Piccante with Spicy Soppressata and ‘Nduja)
  • Er Cuppolone (Dome of Sheep Ricotta Mousse on top of a Frolla Tart filled with Pastry Cream, Black Cherry and Chocolate Chips) 

Designed to pair with the creamy and savory flavors of Carbonara, the wine selection features picks by the glass to cut through, while lifting the peppery notes of the dish. For an aperitivo alla Romana, a Pallini Limoncello Spritz or a Peroni completes any meal. 

THE PROGRAM 

Throughout the months of April and May, Eataly Chicago will honor the traditions of Rome’s culinary scene through special events and educational programming across its restaurants and La Scuola, the Eataly cooking school. Highlights include immersive, communal table experiences for weekly “Roman Nights,” hands-on classes and demonstrations, and storewide festas in select markets.
