Course 3

  • Cold smoked salmon
  • Jacoulot 12 Yr Single Malt - The whisky spends nine and a half years maturing in a selection of ex-bourbon casks, and then an additional two and a half years finishing in Jacoulot’s ex-Marc barrels. Baking spices and soft cereal grains intertwine with soft baked apples and salted caramel — just a hint of clean smoke and sweet soil on the tail.

Course 4

  • Wagyu Meatball & Eggplant salad
  • Nikka From The Barrel - The blend combines both single malt and grain whisky from the Miyagikyo and Yoichi distilleries, which are then married in a variety of casks, including bourbon barrels, sherry butts and refill hogsheads.

Creamy texture and rich, rounded flavors of toffee, vanilla and coconut. Long, sweet and nutty finish against the grain.

Course 6

  • Shibui 10 Yr Bourbon Barrel Aged - This Japanese bottling was initially matured in American oak casks, before being finished for six months in barrels that previously held umeshu liqueur.

Course 7
