Latest update: Mexican Radio by Chef Dudley Nieto Opening May 5th

Roanoke Hospitality announces a collaboration with Chef Dudley Nieto to bring a Mexican dining destination to the Loop neighborhood. Mexican Radio will open May 5 at 100 W. Monroe, within the Hyatt Centric Chicago The Loop Hotel. The new concept will feature a menu of seasonal dishes pulling inspiration from regions across Mexico, including Oaxaca, Puebla, and Yucatán, including inspired tacos, craft margaritas, and a tequila-forward cocktail menu.

Led by Culinary Director Chef Dudley Nieto (Fat Rosie’s, Adobo Grill, Dos Caminos, Rosa Mexicano), a Puebla, Mexico native, the concept draws on more than 25 years of experience in Mexican cuisine, paired with classical French training at Le Cordon Bleu, where he developed a foundation of French precision applied to ancestral Mexican traditions. His approach blends traditional techniques with contemporary execution, delivering dishes that are rooted in heritage and elevated for today’s diner.

“Mexican Radio is about creating a space where great food, music, and culture come together in a way that feels both energetic and inviting,” said Bryan Gerrish, CEO of Roanoke Hospitality. “We wanted to bring something to the Loop that feels vibrant and transportive, while still being approachable for guests to enjoy any time of day.”

“For me, this menu is deeply personal, it’s a reflection of the regions, ingredients, and traditions I grew up with,” said Chef Dudley Nieto. “We’re honoring authentic Mexican flavors while introducing thoughtful techniques and presentations that elevate the experience, creating dishes that feel both familiar and exciting for our guests.”

Open daily, Mexican Radio will offer breakfast, lunch, happy hour, dinner, and weekend brunch. Guests can expect a menu that evolves throughout the day, starting with morning favorites like pan dulce, huevos rancheros, chilaquiles, and café de olla. Lunch offerings will include a range of favorites including tortas, taco plates, ceviche, and fresh salads. In the evening, the menu will expand to feature regionally-inspired dishes including ribeye tacos, carnitas, seafood specialties, house-made moles, and signature entrées, alongside standout items like an al pastor trompo and molcajete, shareable starters, and a bar program, with monthly rotating regional specials offering new flavors and inspiration throughout the year.

Mexican Radio will offer an atmosphere ideal for after-work gatherings, group dining, and late-night experiences. A standout bar program will showcase an extensive selection of tequila and mezcal, as well as classic cocktails and modern margarita variations. Reservations will be available, with private dining options for groups and events.
