Cat-Su Sando will be doing a kitchen takeover at Pilot Project Brewing (2140 N Milwaukee Ave) on Tuesday, October 6 through Thursday, October 8 from 6pm-10pm. On the patio, a variety of their sandos paired with Pilot Project beer - rumor has it there might even be an inflatable, waving cat on site.
Launched as a cloud kitchen earlier this month, Cat-Su Sando was born from chefs Will Schlaeger (Next, Saison, Blackbird) and Shawn Clendening’s (Oriole, Saison, Blackbird) mutual regard for Japanese cuisine and culture. The craft Schlaeger and Clendening are continuously constructing is honors the Japanese ideals of precision and grace, while simultaneously infusing moments of their own authentic joy and light-hearted humor. The menu consists of a variety of “sandos” a.k.a. sandwiches - including a Cat-Su Sando (Fried Pork Cutlet, Cat-Su Sauce, Fermented Jalapeno, Cabbage, Milk Bread), grilled skewers called kushiyaki, okonomiyaki, a few sides and a section coined personably, “fun things.”
