Context and background: Weekly Vegetarian Meal June Subscription Orders Being Taken at Prairie Grass Cafe
Prairie Grass Cafe is extending its offering of special Vegetarian Seasonal Salad Thursdays in June. “The program has been very successful with more and more people subscribing to enjoy fresh, seasonal vegetarian meals. The June subscription series will feature fruits and vegetables from local farms,” says Sarah Stegner, co-owner and co-chef at Prairie Grass Cafe.
There are four meals in the subscription, available for pickup every Thursday in June.
"Meals feature a composed salad reflective of the season primarily with vegetables but also with some grains, nuts, and fruit," says Chef Stegner. "This subscription includes the salad plus one side to round out the meal, adding texture, flavor and diversity."
“These kinds of salads require ‘foraging and gathering’, or what we now call procurement,” she said. They are labor-intensive with lots of washing, chopping, blanching and assembly. The end goal is delicious and nutritious food that supports your schedule and lifestyle."
