Noble Square’s, Vaca’s Creamery, is expanding in February 2023. Vaca’s Creamery Lincoln Square will open in Giddings Plaza with indoor seating, an outdoor patio, and new menu items. Vaca’s original soft serve window opened in May 2021 offering an all vegan menu of soft serve and toppings made daily from original recipes.
The Lincoln Square location will expand their house made toppings and ice cream menus and add seasonal pastries and ice cream pies to their daily offerings. Owners Mariana Marinho and Dylan Sutcliff started Vaca’s Creamery as a celebration of soft serve ice cream but their origin is a vegan baked goods company called All Tomorrow’s Pastries.
“We originally started in Chicago selling vegan pastries at farmers markets, but the dream was always soft serve ice cream,” Sutcliff explained. “Now after almost two years of hand-crafting soft serve sundaes, it’s so exciting to debut new desserts, bring back old favorites and make tasty vegan desserts for Lincoln Square.”
The expanded menu allows chef and recipe developer Mariana Marinho to draw from her Brazilian roots. “One of my proudest achievements is seeing vegan Brazilian cheese bread become a huge hit at our ice cream shop,” said Marinho. “Brazilian foods, especially desserts, are different from what you find in America and it’s amazing that people love them like I do.”
The shop in Noble Square will temporarily close with Lincoln Square’s grand opening, but it will reopen in the Spring. “The original location in Noble Square is still busy in the cold, even without indoor seating,” said Sutcliff. “But the Lincoln Square shop will have warm baked goods, and plenty of tables so come and try our new treats!”
