Beginning August 20 – Chef Sujan Sarkar will be launching three new tasting menus (Non-Vegetarian, Vegetarian, and Vegan) at the restaurant. Optional wine pairings, curated by Head Sommelier Tia Polite, are also available at two levels.

Indienne's all-new cocktail program was crafted by the restaurant's new head bartender, Akshar Chalwadi. By repurposing kitchen waste into libations, Indienne's cocktail program attempts to minimize waste. For example, seabass trimmings find new life in the "Seabass" cocktail, lime peels and pulp are transformed in the "Ancho," and spent coffee and cocoa nibs add depth to the "Coffee." 

Akshar Chalwadi brings nearly two decades of experience to his role as Head Bartender at Indienne. The Mumbai native holds a Bachelor's degree in Hotel Management from Mangalore University's Moti Mahal College of Hotel Management and has attained Level 3 Advanced Wine Certification through WSET. Chalwadi honed his skills in hotels and restaurants across India and Malaysia before relocating to Chicago in 2024. His journey includes a six-year tenure as Operations Manager and Mixologist at Nadodi. Most recently, Akshar served as the Brand Director at rākh in Kuala Lumpur.
