Tired of turkey sandwiches? Over leftover casseroles? This is the year my friends - the year of the Thanksgiving Empanada. Chef John Manion of El Che Steakhouse & Bar has prepared a simple and quick new way to enjoy that never-ending stock of Thanksgiving leftovers. The unique recipe utilizes all of the traditional leftovers you can expect to have laying around like turkey, mashed potatoes, stuffing and gravy.

Here’s what you’re going to need to successfully prepare this culinary delight:

  • 1 c Leftover turkey - leg and thigh meat preferred, pulled off the bone

  • 1 c Leftover mashed potatoes

  • 1 c Leftover stuffing

  • ½ cup leftover gravy (to bind everything together)

  • 2 packages empanada dough (10 discos each)

  • 2 cups gravy and 1 cup cranberry sauce (for dipping)

  • Combine all ingredients in a large mixing bowl and knead together with your hands.  If you’ve done Thanksgiving right you shouldn’t need to season the mixture at all, but definitely taste for seasoning.  Pre-heat oven to 375 and lightly grease a baking sheet.

  • Place roughly 3 tablespoons of the mixture in the center of each empanada disco, fold over and crimp by either folding or with a fork.  Bake for 20-25 minutes or until golden brown. Serve with hot gravy (John’s preferred method) and the leftover cranberry sauce.
