Farmheads Hospitality has announced that its new restaurant, Thomas & Dutch, will open on April 12, in downtown Evanston at 703 Church St. The restaurant will offer Midwestern ingredients alongside a crafted wine menu.

With a menu inspired by Midwestern ingredients, Thomas & Dutch creates a shared dining experience with a number of communal plates. Diners will notice the menu divided up to highlight a number of Midwestern cuisine options – Our Journey Begins with plates meant to be shared among friends, vegetable-focused bites from Into The Wild, locally sourced fish in Sea Change, and finished with meat-forward plates from The Great Hunt.

Dishes to accompany these key themes of the menu have been crafted by the Thomas & Dutch culinary team. Thomas & Dutch offers a number of proteins from both the land and sea, including the Fried Walleye with beluga lentils, celery citrus salad, water cress, radish and fried capers, the Roasted Berkshire Pork Tenderloin made with grilled apples, corn pureé, potatoes and sautéed escarole and the Beef Wellington, a beef tenderloin served with mushroom duxelles, prosciutto, puff pastry and beef glazed turnips.

To accompany the meal, Thomas & Dutch has crafted a wine and cocktail list, complete with recommended wine pairings for a number of menu items. The wine program is focused on featuring bottles sourced from female-driven wineries. The beverage program features a seasonally rotated selection of both cocktails and spirit-free sippers utilizing similar ingredients as the dinner menu. Cocktails include the Honeydew Spritz made with gin, honeydew, honey and bubbles, the Beetroot Manhattan made with rye, pickled beet, and mushroom and the Sloe Gin Fizz made with sloe gin, tart cherry, rhubarb, prosecco, and egg white.

Thomas & Dutch will be adding a 20% service charge to all checks, in order to pay their employees a fair living wage and benefits. 

Thomas & Dutch will be open for dinner Tuesday through Sunday from 4 p.m. to 11:30 p.m.
