The Ritz-Carlton, Chicago announces the appointment of Damion D. Henry as executive chef. Assuming the position immediately, Chef Henry brings more than two decades of experience across five-star hotels and luxury lifestyle destinations. In his new role, he’ll oversee all food and beverage operations at the property, including signature restaurant Torali Italian-Steak, Rooftop at Torali, The Café, in-room dining and the hotel’s catering and events program.
Henry’s passion for cooking began in his childhood kitchen in Jamaica alongside his mother and aunt, an experience that shaped both his technique and his “cook from the heart” philosophy. He credits these early influences with instilling a strong work ethic and appreciation for the role food plays in bringing people together, values that continue to guide his career.
His approach to menu development draws from the diverse culinary landscapes he has experienced throughout his career, from the abundance of fresh seafood and coastal ingredients in Florida to the globally driven dining culture of New York City. His time in the Midwest, including Chicago, has further strengthened his focus on seasonality and local sourcing.

Chef Henry introduces a refreshed menu at Torali while continuing the restaurant’s emphasis on seasonal ingredients, technique and balanced flavors. He is also elevating the hotel’s afternoon tea with updated offerings.

Before joining The Ritz-Carlton, Chicago, Henry held senior leadership roles at the Chicago Athletic Association Hotel, Four Seasons Hotel New York, Four Seasons Hotel Miami, Conrad New York and The Biltmore Hotel. Most recently, during his tenure at The Langham, Chicago, he played a role in the hotel earning the Forbes Five-Star Award for nine consecutive years.
