The Pink Polo, the first of two new restaurants openings this year from the team behind Wicker Park’s The Delta, is hosting special preview, prix fixe dinners starting this weekend, Friday through Sunday, 5pm to 9pm. The Pink Polo, located inside The Chicago Collection hotel at 312 W. Chestnut (formally Drop Shop Coffee) will host the soft opening dinners for guests to get a neak peak of the space and food ahead of its formal opening.
The seven course prix fixe dinner is $100 per person and allows guests to bring a bottle of wine to drink with their meal. Suggested wine pairings for each course are reflected on the menu. Additionally, The Pink Polo will be offering an a la carte mocktail menu for guests to experience.
Influenced by South American fare, some of the prix fixe menu highlights include:
Curito – cabbage, gastrique, chiles
Passionfruit Ceviche – Snapper, Mussels, Yam chip
Coxinha – potato, chicken, black garlic aioli
Pincanha de Argentine – beef, chimi, frites
Additionally, each course also has a vegetarian option available which also includes suggested wine pairings for each course.
Reservations are required for the special dinner previews and can be made on Open Table. A formal opening date with a full cocktail bar, wine program, complete menu and more, is forthcoming.
