G.O.O.D Pineapple hospitality group has announced the opening of The Pink Polo Social Club and Bar on Friday, October 4th. The Pink Polo is a workspace and coffee bar by day and transforms into a cocktail lounge and restaurant during the evenings. Located inside The Chicago Collection hotel at 312 W. Chestnut - formally Drop Shop Coffee - The Pink Polo functions like a private social club, without a membership fee. The social club and bar will serve guests at the cafe and bar from 9am to midnight Monday through Friday, and until 1am on Saturdays.
“If we’ve learned anything in the nearly seven years of operating The Delta, it’s that people in Chicago want to gather in a space that has good energy, an unpretentious environment, and tells a story that they can resonate with and want to share with friends. And we’ve created just that with The Pink Polo,” says Eldridge Williams, co-founder, operating partner and creative director of G.O.O.D Pineapple. “We’re not reinventing the restaurant industry with this concept, but we are planning to leave a significant impression, as The Pink Polo will be a social hotspot where you can take clients, kick-back with friends, and have a damn good cocktail in a chic environment.”
A workspace by day, patrons of The Pink Polo will be able to work, socialize and have access to a full coffee and traditional bar, as well as fresh pastries, artisanal sandwiches, salads and more, on a first-come-first-served basis. The space has been reimagined to also accommodate meetings, lectures, private events and more.
During the evening however, The Pink Polo transitions into a cocktail lounge, offering a craft cocktail experience and social atmosphere. The craft cocktail program features a classic cocktail list, as well as signature cocktails. American tavern-style food with South American and Peruvian influences, such as butter poached ceviche and Peruvian nachos, are available to snack on as well.
