G.O.O.D Pineapple hospitality group, who brought neighborhood restaurant and cocktail bar to Wicker Park, The Delta, come two new concepts - The Pink Polo and Red River Dicks will make their mark in Chicago in 2024, starting with the opening of The Pink Polo in the Spring, followed by Red River Dicks in the Summer. 

If we’ve learned anything in the nearly seven years of operating The Delta, it’s that people in Chicago want to gather in a space that has good energy, an unpretentious environment, and tells a story that they can resonate with and want to share with friends,” says Eldridge Williams, co-founder, operating partner and creative director of G.O.O.D Pineapple. “We’re not reinventing the restaurant industry with these concepts, but we are planning to leave a significant impression, as The Pink Polo will be a social hotspot where you can take clients, kick-back with friends, and have a damn good cocktail in a chic environment. Whereas Red River Dicks is a lively country western bar and restaurant, all about good times and good vibes - marrying an elegant space with a high-energy atmosphere. Red River Dicks will be the first, and only black-owned country western bar in the Midwest, and pay homage to America’s first black cowboy, Nat Love, AKA, Red River Dick. Anyone who walks into this space will saddle-up to an era of country elegance - dark tapestries, regionally inspired U.S. BBQ, large-format cocktails, DJ’s spinning remixed country classics and more. This isn’t your grandma’s honky tonk bar.”

The Pink Polo Social Club & Bar

Located inside The Chicago Collection hotel at 312 W. Chestnut - formally Drop Shop Coffee, The Pink Polo will function like a private social club, without a membership fee. A workspace by day, patrons will be able to work, socialize with a full coffee and traditional bar, as well as fresh pastries, artisanal sandwiches, salads and more, on a first-come-first-served basis. The space has been reimagined to also accommodate meetings, lectures, private events and more - a space for digital nomads, work-from-home professionals and working client lunches.  

During the evening however, The Pink Polo will transition into a cocktail lounge, offering a craft cocktail experience and social atmosphere. The craft cocktail program will feature a classic cocktail list, as well as signature cocktails. American tavern-style food with South American influences, such as butter poached ceviche and Peruvian nachos, will be available to snack on as well.

“If you want to have a meeting with a client and then treat them to cocktails after shop-talk, this is the place. If you want to have a round of cocktails and kick-back with friends before or after dinner, this is the place. If you want to treat your wedding guests to an evening of luxurious cocktails and bites in a private space, this is the place. The Pink Polo is an all-encompassing destination for young professionals and city dwellers to drink, socialize, work and play. With its plush yet playful design, it’s the ideal location to let your creative energy flow during the day and unleash your playful side in the evening. A truly authentic space that stems from positive vibes and embraces our “all are welcome” mantra,” says Williams. 

The Pink Polo will be open Monday thru Sunday starting at 10am daily, with extended late-night hours on the weekend. 

Red River Dicks

Inspired by the travels and stories of 18th century African American cowboy, Nat Love, AKA “Red River Dick,” G.O.O.D Pineapple is a modern country bar and BBQ restaurant rooted in American history, cuisine and music. Historically known as Nat Love, but reputationally known as Red River Dick, Nat Love is considered the first notorious American Cowboy. A former slave following the Civil War, Love’s exploits have made him one of the famous heroes of the Old West.  

“Like The Delta, we have tapped into our Black roots to unearth a concept that encapsulates Black excellence with inspiration from a Black icon that you’ll rarely read about in textbooks,” notes Williams. “Red River Dicks will be a traditionally rooted, modern American country bar and BBQ restaurant with a rich Nashville-meets-Aztec aesthetic. It will not be corny, nor ordinary. It won’t be honky-tonk, or your mama’s square-dancing club. It’s sophisticated, lively, approachable, and you better believe it’ll give Nashville-Bachelorette destinations a run for their money.” 

Red River Dick’s, opening in the former Sedgwick’s Bar & Grill Space (1935 N Sedgwick), will offer a vintage interior, complemented by a modern cowboy club-like dining room and bar. Surrounded by custom wood finishes, Aztec decor, reclaimed wooden tabletops, rich leather, an 18th-century designed bar, and chandeliers. 

Red River Dick’s food and drink menus will showcase regional flavors and dishes. Accommodating up to 110 dining room and bar guests, Red River Dick’s intention is to offer a casual dining experience with regionally inspired BBQ dishes from around the U.S., alongside craft cocktails Some menu options include:

  • Crusted Cowboy Beef Ribs
  • Tennessee Smokehouse Duck Sandwich
  • Garlic and Parsley Buttered Grilled Sweet Corn Elote
  • Red River Ranch Potato Salad
