Following its 25th anniversary, The Peninsula Chicago is unveiling its newest restaurant, Comunità, debuting in early 2027. Set in the hotel’s 5th-floor dining room, Comunità transforms the space into a bustling culinary destination by night, delivering premium products and authentic flavors from Italy’s Emilia-Romagna and Tuscany regions to the Chicago community. Comunità honors craftsmanship and genuine hospitality, ensuring every guest feels a familial welcome from the moment they enter the restaurant, reinforcing the hotel’s long-standing legacy of gastronomic preeminence.
Comunità fosters a convivial, communal experience through tableside service and large-format dishes. This communal spirit is anchored by the menu’s signature selections, such as the imposing 1.5 kg Bistecca alla Fiorentina and Cotoletta alla Bolognese. Spearheaded by Chef de Cuisine Santo Santonocito, pasta is a point of pride at Comunità, with handmade in-house options such as Lasagna alla Bolognese and Tortellini in Brodo. Sourcing rare and premium products from Northern Italy, including Red Cow Parmigiano Reggiano and Cullatello di Zibello, the restaurant honors the discerning palate without condescension, ensuring guests feel like they belong. Through immersive storytelling, Comunità encourages its guests to dive deeper and understand the history which forged their meal.
“It is an honor to take up the mantle of this iconic space within The Peninsula Chicago and bring recipes of my youth to the city”, says Chef Santo Santonocito. “We are excited for our guests to experience true Italian hospitality and immerse them in the traditions and taste of our country.”
Echoing the kitchen’s commitment to craftsmanship, the beverage program at Comunità offers a deeply authentic Italian experience. Curated by Sommelier and Manager Sylvia Tremolini, the extensive wine list guides guests through appellations including Brunello, Lambrusco and Montepulciano, with a special focus on Tuscan varietals. Complementing the cellar, the cocktail program features interactive tableside martini service, classic Italian cocktails and a signature amaro to close out the meal.
As evening falls, Comunità’s reimagines The Lobby, transforming the space into a completely new environment. Shades of brick are electrified against the warm blue colors of the dining room, creating a visual distinction for the dinner service. Coupled with a style of service that balances a familial sense of Italian hospitality with The Peninsula Chicago’s exacting standards, Comunità delivers a truly immersive, transportive experience.
