The Florentine invites guests to experience a taste of Tuscany on Thursday, October 20 at 6:30p.m. with a special fall-inspired meal entitled “Perfect Pairings” featuring expertly curated wines. The dinner will be hosted in collaboration with well-renowned winery Castello D’Albola Winery, native to the Tuscan region in Italy and operated by the Zonin family. Lino Vitale, a representative of the charming winery, will guide the evening along with The Florentine’s sommelier Alexandria Sarovich.

Throughout the experience, guests will have the opportunity to deepen their knowledge on executing thoughtfully selected wine pairings – understanding why certain flavor profiles complement each other and how to pace the pairings throughout a multi-course meal. The seasonal, four-course menu prepared by Executive Chef Zach Walrath will feature:

Polpo octopus carpaccio, sopressatta chips, green apple, fennel
Vermentino, Calasole, Rocca di Montemassi, 2015

Tortellini celery root and pecorino filled, roasted grapes, rosemary, sherry
Super Tuscan, Sassabruna, Rocca di Montemassi, 2013

Cinghiale wild boar chop, delicatta squash, charred tropea onions, spigarello
Chianti Classico Riserva, Castello d’Albola, 2007

Pera bosc pear crisp, biscotti crumble, candied ginger, fiore di latte gelato
Vin Santo, Castello d’Albola, 2005
