On Tuesday, August 23 in a toast to celebrate Women’s Equality Day, the champagne house Billecart-Salmon, founded by Nicholas Billecart and his wife, Elisabeth Salmon in 1818, joins NoMI in an evening showcasing champagne. The second entry into NoMI’s Taste of NoMI series presents A Night of Bubbles with Billecart-Salmon. Taste of NoMI is a monthly dinner series hosted by the Park Hyatt Chicago, featuring a curated tasting menu with wine pairings.

NoMI invites guests to experience the interplay between Billecart-Salmon champagnes and NoMI Executive Chef Terence Zubieta’s selection of crisp and refreshing ingredients culminating in a spirited 5-course menu. Selections from the dinner include the Billecart-Salmon’s flagship cuvée, the aptly colored light pink Billecart-Salmon Brut Rosé, and NoMI Pastry Sous Chef Solange Austin's Strawberry Vacherin dessert adorned with pink peppercorn strawberries, mint basil ice cream, vanilla bean whipped ganache, mint verjus gastrique, topped with a macaron shell.

The dining experience will feature a guided presentation by Billecart-Salmon, NoMI Executive Chef Terence Zubieta & Pastry Sous Chef Solange Austin with private usage of the restaurant’s NoMI Kitchen dining space overlooking Water Tower and Lake Michigan.
