To start,pair coppa with Hubaner cheese, which features notes of brown butter and toasted nuts.Then, move onto hearty small plates like smoked whitefish chowder, or the Swabian pretzel with cauliflower and Comté fondue. Main courses put a fresh spin on Alpine ingredients. Try the slow-cooked duck leg with trout beans and roasted parsnips, or the pan-roasted salmon with butternut squash, collard greens and pickled cipollini onions.
