Billy Dec is set to bring his Southeast Asian culinary concept to Chicago's Fulton Market neighborhood on February 26, 2024. Marking 15 years since the inception of the first Sunda New Asian location in 2009, Sunda Fulton Market (333 North Green Street, Chicago) provides new Asian creations, spanning Japan, Thailand, Vietnam, China, and other Southeast Asian countries like the Islands of the Philippines, where his family is from.

“As a Filipino-American born and raised in Chicago, traveling throughout Southeast Asia my entire life while visiting family, it has been a dream come true to serve alongside such amazing Sunda teammates the last 15 years bringing elevated New Asian offerings inspired by the Southeast Asian dishes we grew up on, to the greatest patrons in the world. As we continue to extend our Sunda offerings and love from this very special River North, Chicago born brand, to booming cities like Nashville, Tampa, and others we plan to announce next month, it is an honor to expand our reach in our hometown city we love most, in equally incredible Fulton Market, said Dec.”

The Fulton Market menu, led by Executive Chef Mike Morales, will feature selections from behind the sushi bar, dim sum, noodles, salads, and rice dishes, to seafood, beef, pork, and poultry. Hailing from Tokyo, the Head Sushi Chef Ise Matsunobu spearheads Sunda’s sushi program. Complementing the menu are seasonally inspired craft cocktails, a selection of sakes, Asian beers, Japanese whiskies, and a list of wines. 

Menu options include: 

  • Spicy Tuna Crispy Rice - masago, chives, sriracha, chili oil, serrano

  • Truffled Chicken Siu Mai - shiitake, hon-shimeji, hot mustard, truffle vinaigrette 

  • Roasted Duck Hash - glazed duck leg, daikon cake, frisee, crispy egg

  • Ube Espresso Martini - 1800 reposado, mr black coffee liqueur, ube milk 

  • Low Thai’d - Tanduay Silver Rum, strega, hopped pineapple, thai basil, vanilla, white peppercorn, dragonfruit, lime
