Renaissance Chicago Downtown Hotel’s onsite restaurant Staytion Market & Bar announces multiple new summer menus. 

The new breakfast menu features classics like a Benedict or Brioche French Toast, and Chef Vazquez brings in the flavors of the various Chicago neighborhoods. The Pilsen Benedict with blue corn sopes, housemade chorizo, spinach, poached eggs, poblano crema and breakfast potatoes. Or, the Italian Beef Hash featuring sweet peppers, caramelized onions, and poached eggs covered in a special Giardiniera Hollandaise. For a more street food-inspired meal, choose from a variety of handhelds such as a Breakfast Burrito, Ham & Cheese Croissant, the famous Staytion Breakfast Burger and more. 

Staytion Market & Bar’s lunch menu features salads, pizzas, and sandwiches. For salad options like the West 16th Cobb featuring a bib lettuce base topped with dried corn, roasted poblano, tomato, radish, crispy chorizo, avocado puree, and smoked jalapeno and lime vinaigrette, or the Crispy Wonton with field greens, red cabbage, radish, carrots, toasted sesame, and creamy chili-garlic dressing. Or the pizza selection with options of Pepperoni & Sausage, Wild Mushrooms, or Margherita. 

Sandwiches include The Chi Town Hero featuring baguette bread with a smear of giardiniera pesto and layers of roast beef, pepperoni, salami, mozzarella, pickled carnival peppers, arugula and crispy shallot. For a more plant-forward option, try the Shawarma Cauliflower Wrap stuffed with hummus, crispy garbanzo, cucumber, tomato, pickled red onion, feta and red cabbage. The rotating “Chef’s Perfect Sandwich” is a Crispy Chicken Torta featuring chicken milanese, jalapeno aioli, pickled jalapeno, pickled red onion and caramelized cheese between a telera roll. 

“Waking up early on a Sunday morning, my grandma would take me to the local panaderia and we would buy all sorts of sweet breads,” said Chef Vazquez. “My favorite was the telera rolls - straight from the oven, warm and crunchy. We used to make these tortas. This is my modern take on my grandmother’s classic.” 

Staytion Market & Bar also boasts a list of bar foods such as dry rub Elote Wings dunked in aleppo ranch or Shrimp Rings with jalapeno aioli for dipping. Or the Cheese and Charcuterie, featuring Giorgio’s Natural Salami & Brescola, Bandaged Cheddar, Apricot Mostarda and more. 

The dinner menu features similar options from the lunch menu plus meat and fish entrees with sides a la carte. The Grilled Strip Steak with warm corn and piquillo pepper chimichurri, Herb Roasted Chicken with wilted arugula, carrot haystack, and red pepper veloute, or Pan Seared Salmon with cucumber noodles, sesame, cilantro, lime and ginger yuzu glaze. Sides include Harissa Cauliflower, Sumac Roasted Carrots, Mac & Cheese and more. Finish with something sweet from Staytion Market & Bar’s dessert menu like the Ube Panna Cotta with Ube Jam or the Not So Classic Carrot Cake featuring carrot sponge, carrot caramel, white chocolate, whipped ricotta, brown butter crumble carrot gel and chervil. 

The beverage menu showcases classic and signature cocktails, draft and packaged brews, and pours of wine. Mixologist Kevin Fahey serves a variety of cocktails such as Boat Party, a mix of Beefeater Gin, blueberry syrup, lemon juice and and ginger beer, or Tropius Sour featuring Jim Beam, banana tincture, banana puree, lemon juice and demerara syrup.
