Greg Mohr, Scott Weiner, and a trio of chef/partners from The Fifty/50 Restaurant Group will launch Ruth’s Panmade Pizza – a delivery-only virtual kitchen specializing in butter-crust deep dish pizzas – starting at 5pm on Thursday, November 19.
Ruth’s Panmade Pizza – a play off the name of The Fifty/50 Restaurant Group’s four Roots Handmade Pizza locations – will serve “unlawfully good pizza for the greater good” while honoring the late great Supreme Court Justice Ruth Bader Ginsburg.
In 1972, Ruth Bader Ginsburg co-founded the Women’s Rights Project at the American Civil Liberties Union. And to honor her advocacy, Ruth’s is donating 10% of all Ruth’s proceeds to the Roger Baldwin Foundation of the ACLU of Illinois which will be earmarked to its Women’s and Reproductive Rights Project.
Scott loves Roots’ Quad Cities style pizza that Greg brought from his hometown of Rock Island, Illinois, to Chicago, but Scott wanted a slice (not a strip) of his childhood, too. So Scott – a Northbrook native, deep-dish lover, and Supreme Court history buff – began concepting Ruth’s nine months ago with Greg and Fifty/50 Group chefs/partners Chris Teixeira, Nate Henssler, and Martin Arellano.
Their opening Ruth’s menu includes butter-crust deep-dish pizzas, sandwiches (like one stuffed with fried lasagna), salads, jumbo chicken wings with six different sauce options, and slices of Baby Ruth Candy Blast Cheesecake along with wine bottles and craft beer.
Ruth’s will run out of the Roots Handmade Pizza kitchen at 1610 N Wells St in The Second City building in Old Town. The delivery range is seven miles from that Roots location. Guests can view the menu and order online via the Ruth’s website. Ruth’s initial delivery hours are 5pm to 10pm Sunday thru Thursday and 5pm to 11pm on Friday and Saturday. Expect lunch delivery hours starting in December.
Scott wanted a flaky pizza dough -- rubbed with plenty of butter and a touch of garlic oil -- pan-baked to caramelize the sides and bottom. That butter crust -- plus toppings, a proprietary three-cheese blend (mozzarella, provolone, and parmesan), and a tangy marinara sauce.
