Now, the West Loop restaurant is unveiling its most significant evolution yet with the introduction of anEndless Table Experience, an entirely new, unlimited dining format complemented by a complete kitchen transformation centered around the tandoor oven, grill and elemental power of fire.
Among the city’s first Indian restaurants recognized by the Michelin Guide, ROOP has built its reputation on modern interpretations of regional Indian cooking, drawing inspiration from North India, Kerala, Goa and beyond. That spirit is now taking ROOP in an entirely new direction. The restaurant has transformed its kitchen, menu and style of service to make the grill the centerpiece of the concept, creating a culinary workshop for an expansive new menu celebrating the diversity of Indian flavors, preparations and regional traditions.
At the heart of the new ROOP is its Endless Table Experience, an unlimited dining experience priced at $55 per person that invites guests to explore the restaurant's entire menu. Every dish is served in perfect portions designed for discovering, sharing and coming back for more. Guests can choose exactly what they'd like to enjoy or hand the reins to their server, who can curate a personalized experience for the table.
Unlike a traditional tasting menu, there are no prescribed courses or required ordering sequences. Guests are free to move through dips and breads, street-food-inspired dishes, kulchas, tandoori grills, curries, biryani and more, exploring the menu however they please. Everything is prepared fresh and continuously brought to the table upon ordering, creating an experience that feels generous and abundant while maintaining the quality and refinement ROOP is known for. Guests are encouraged to discover new favorites, revisit dishes they love and reorder as often as they'd like. The experience only ends when they're satisfied. For those who prefer to order individually, ROOP's complete menu is also available à la carte.
“We have always wanted ROOP to be a place where guests can experience Indian cuisine in new and unexpected ways,” said Manish Mallick, owner of ROOP. “Indian gastronomy is constantly inspiring us, and we never want ROOP to stand still. The Endless Table is an invitation to experience the incredible breadth of Indian cooking, to try something you might not normally order, discover something new and keep coming back for more. We've taken something fundamental to Indian cuisine — the tandoor, fire, marinades and spice — and made it the foundation of an entirely new dining experience. It will feel very different for guests who know and love ROOP, but it is still very much ROOP: rooted in India, driven by discovery and executed at the highest level.”
The transformation extends into ROOP's kitchen, which has been completely reshaped and renovated around the grill, bringing two of Indian cuisine's most foundational cooking elements to the forefront. The reimagined kitchen serves as the workshop for the entire new menu, allowing fire, smoke, char, marinades and spice to drive the cooking. Vegetables, paneer, seafood and meats are all given equal opportunity over the flame, with preparations including Tandoori Beef Tenderloin, Malai Paneer with paneer cheese made in-house daily, Charred Corn inspired by Bombay street stalls and elevated with Madras curry aioli and crispy leeks, Lion's Mane Mushroom, Malai Chicken Tikka, Lamb Boti, Achari Paneer, Fish Tikka, and Haryali Chicken. Selections will continue to evolve with seasonal ingredients, new marinades and regional influences, giving returning guests something new to discover.
Continuing to lead ROOP's culinary evolution is Chef Rohit Thaledi, originally from Uttarakhand, India, whose background includes Indian Accent, known for its contemporary interpretation of Indian cuisine, and Punjab Grill, celebrated for its refined approach to North Indian and Punjabi cooking.
“My background has allowed me to experience Indian food through many different lenses, from the traditional cooking I grew up with to kitchens that showed me how far Indian flavors and techniques can be taken,” said Thaledi. “The tandoor brings us back to something foundational in Indian cooking, but there is endless room within that tradition to create, explore regional influences and give guests something they may not have experienced before.”
Fresh breads also take on a bigger role in the new format, including their warm and pillowy Ladi Pav, Paneer Kulcha, and ROOP’s signature Chili Cheese Kulcha, made with cheddar, Thai chili and shishito peppers, with new Kulcha varieties rotating in throughout the seasons.
Beyond the grills, the expansive new menu brings together longtime ROOP favorites, including its Signature Butter Chicken and ROOP Dal, alongside new expressions of India's regional cooking. New and reimagined dishes include regional curries such as Kerala Shrimp with tandoor shrimp and coconut curry; Lamb Shank Nihari with saffron nihari; Whole Sea Bass with Malabar curry; and Kharda Saag Paneer with spinach, cashews, confit garlic and fried leeks. Chicken and Jackfruit Biryanis round out the menu, giving guests even more to explore as part of the Endless Table Experience or à la carte.
