Rendang Republic’s Takeover of TenGoku Aburiya’s Bento & Co.

Rendang Republic’s Chef John Avila is bringing his flavors to TenGoku Aburiya’s kitchen next week!

Inspired by his mother’s home cooking, the flavors of Padang Indonesian cuisine will take the crown in the izakaya’s beloved Bento & Co. series through their Mackerel Dabu-dabu bento. Layering spice and aromatics, this cross-cultural lunch special features grilled mackerel topped with sambal dabu-dabu (an Indonesian chili relish), fried shallots, cilantro and acar acar (Indonesian pickles). On the side, the box includes nasi goreng (Indonesian fried rice), an arugula salad with yuzu vinaigrette, beef pan-fried gyoza and miso soup.

Priced at $20, the collaboration will be available during weekday lunch hours (11:30 a.m. to 1:30 p.m.) from Tuesday, April 14, through Friday, April 24. As always with these collaborative bento boxes, a portion of the proceeds from each special sold will benefit the Greater Chicago Food Depository, supporting efforts to fight food insecurity and provide meals to those in need.
