Pizzeria Gabbo, a neighborhood pizzeria and bar from Lettuce Entertain You Restaurants, will open its doors in Fulton Market (834 W. Fulton Market St., Suite 200) on Thursday, October 22. Created by Executive Partner and Divisional President Marc Jacobs and Chef Partner Andrew Ashmore (Antico Posto, Beatrix, L. Woods Tap & Pine Lodge), Pizzeria Gabbo will feature two styles of pizza—Chicago Thin & Crispy and New York Crispy, chef’s take on a traditional New York-style with a crispier finish—antipasti, salads and pastas. The beverage program features spritzes, classic cocktails and a wine list that showcases family-owned, sustainable producers.
“We’re thrilled for Pizzeria Gabbo to be a new meeting spot for the neighborhood,” shares Jacobs. “Pizza holds a special place in Chicago’s history and we’re excited to share our take on both Chicago and New York-styles.”
Both styles of pizza are made with premium organic flour to create dough that undergoes a distinctive fermentation process. The New York-style features a proprietary blend of three flours that rest for approximately 48 hours before reaching the oven. Pizzeria Gabbo will offer more than 10 pizzas between the two styles. Signature pies include the edge-to-edge topped, square cut Chicago-Style Fennel Sausage & Giardiniera and Chicago Supreme, and the lighter, airier, classic triangle cut New York-Style Tomato Pie and the Golden Potato, Lemon & Rosemary pizza. Gluten-free crust will also be available.
Pizzeria Gabbo’s menu extends beyond pizza with antipasti including slow-baked Pepperoni Chips served with house marinara and Butternut Squash Croccanti with calabrian chili aioli and housemade giardiniera. Housemade pasta offerings include A Light Lemon Fettuccine Alfredo and Slow-Cooked Chicken Bolognese Rigatoni.
For dessert, housemade soft serve gelato flavors include Roasted Pistachio and Milk Chocolate, also available in a swirl or the Gabbo-Style Sundae, topped with candied orange honey and pistachio praline. A street-facing soft serve window will open soon, offering gelato to-go.
Senior Sommelier John C. Slatter (Aba, Ema) designed the wine list to pair easily with pizza, featuring more than 20 by-the-glass Italian and domestic selections, with an emphasis on Campania—known as the birthplace of pizza. A beer selection combines Italian regional lagers and bocks with craft offerings from Chicago and Cincinnati.
Led by Senior Beverage Manager Nicholas Berggren, Pizzeria Gabbo’s nostalgia-driven bar program features a spritz lineup highlighting aperitivi from Italian Spirits Co., including the Casoni, Ginrosa, Vetz and Moccia spritzes alongside Italian-inspired signature cocktails like the Darjeeling-infused savory spin on a gin gimlet, the Sfizio, the Amalfi Coast-inspired, citrus-layered Al Fresco, tequila-based Margherita, infused with micro basil and sundried tomato, and the lower-ABV Garibaldi. Zero-proof options include an old-school house Limonata, the spritz-like Crodino, and Kirra canned iced teas.
Inspired by small, family-owned Italian restaurants and pizzerias, the 60-seat restaurant was designed by Lettuce’s in-house team. The dining room features wood details, milk glass chandeliers, leather booths and tables, plus an 8-seat bar. A window looking into the kitchen and pizza making.
Pizzeria Gabbo will be open daily for lunch from 11:00 AM - 4:00 PM, and dinner from 4:00 PM - 10:00 PM on Sunday - Thursday and 4:00 PM -11:00 PM on Friday - Saturday, with carryout and delivery to follow.
