Pigtail, the first speakeasy-style concept from José Andrés and ThinkFoodGroup, now offers a curated tasting experience, with five courses, four cocktails and three wines. The menu takes guests on a tour of Pigtail, featuring a selection of cocktails and wines paired with an array of dishes.

The menu leads guests on a journey through cocktails and wine, paired with the following five dishes throughout:

  • Cocktail: Gopalito (Fords gin, amontillado, sudachi, lemon, ginger, honey and sesame) paired with Tostada’ de “Jamón” de Toro con Piquillo Confitado (air bread of house-cured tuna ‘jamón’ with confit piquillo espuma) 

  • Cocktail: Modifier (Avuá Amburana cachaça, Montenegro, Licor 43, touch of sherry vinegar and chocolate bitters) paired with Torchon de Foie Gras (foie gras torchon with brûlée persimmon and PX) 

  • Wine: Ivori, Alella Vinícola 2017 paired with Manitas con Cigala (braised pork trotters with ibérico sofrito and langoustine) 

  • Cocktail: Consume cocktail (Pork consomé, palo cortado, amontillado, egg espuma)

  • Wine: Textures de Pedra, Raventós i Blanc, 2016 paired with Arroz ‘a la Llauna’ con Carrilleras Ibéricas (“square” rice with braised Ibérico pork cheeks) 

  • Wine: Moscatel Dorado, Cesar Florido paired with Tarta de Queso con Miel y Trufa (cheesecake with honey and truffle) 

  • Cocktail: Leatherette (Torres 20 brandy, rye, east India, Yzaguirre Gran Reserva 1884 vermouth and lavender bitters, aged in leather botarrón)

The Tasting Experience is a prepaid ticket bookable through Tock for parties of one to four, at $150 per person for the 2-hour experience. In addition to the tasting experience, diners can also create their own pairings through a la carte drinks and bites, also bookable through Tock.

The “pig” in Pigtail comes from the food menu that highlights Ibérico pork in nearly every dish, aptly making use of the concept’s name and design elements featured throughout the space. The “tail” speaks to the bespoke cocktail menu curated by Lancha, reminiscent of the detail and innovation you’ll find at other TFG restaurants like barmini in Washington D.C. Pigtail is located in the lower level of Jaleo Chicago.

The tasting experience is available from 6 to 9 p.m. Thursdays through Saturdays and is a pre-paid ticket with bookings available now on Tock for parties of one to four. Tickets cost $150 per person.
