Paulie Gee's Logan Square has introduced "The Sheet Show," a new group dining experience centered on a 62-inch by 30-inch grandma-style pizza. The restaurant says the pie is likely the largest pizza available in Illinois and among the largest in the Midwest.

The launch follows the restaurant's 10th anniversary and was developed around a custom-fabricated Sicilian cold-rolled steel pan produced by Smiling With Hope Enterprise. Designed specifically for Paulie Gee's ovens, the pan allows the restaurant to bake the oversized pizza in-house while maintaining its signature grandma-style crust.

Measuring more than five feet in length, the pizza is designed to serve groups of approximately 20 to 35 guests and is intended for celebrations, office gatherings, bachelor and bachelorette parties, rehearsal dinners, fantasy football drafts, team outings, and other group events. The experience is available exclusively for dine-in at the Logan Square location, with one reservation offered per day.

“When we celebrated our 10-year anniversary, we started thinking about what could possibly come next,” said Derrick Tung, owner of Paulie Gee's Logan Square. “The answer was to dream even bigger.

“Creating The Sheet Show wasn't as simple as making a larger pizza. We had to have a custom pan fabricated specifically for our ovens, test the bake over and over, and make sure it delivered the same quality our guests expect. The result is an experience that's meant to bring people together in a way only pizza can.”

Guests can customize the pizza with up to four different sections, each featuring its own combination of toppings. Depending on the package selected, each quadrant can include one, two, or three or more toppings, allowing for as many as 12 topping selections across the entire pizza.

Groups selecting the fully customized option may also choose from several of the restaurant's signature specialty combinations, including the US Pizza Cup Winner with housemade bacon jam, pepperoni, ricotta, basil, and Mike's Hot Honey; Cream of Some Funghi with mushrooms, garlic, Gorgonzola, and Parmigiano Reggiano; My Kind of Town with halal beef Italian sausage, peppers, and onions; Vodkaroni with pepperoni and housemade vodka cream sauce; Hellboy with soppressata and hot honey; and Greenpointer with arugula, lemon juice, olive oil, and shaved Parmigiano Reggiano.

The Sheet Show is available by reservation only and must be booked at least 72 hours in advance through SevenRooms. Groups may also add family-style salads, desserts, and beverages from the restaurant's full cocktail, beer, wine, and non-alcoholic drink menu.
