Paper Plane Pizza – a new pop-up restaurant from industry vets and buddies Dustin Drankiewicz, Sam Nelson-Mann and Milos Stevanovic officially opens October 14.

The 1000 sq ft temporary space located at 1625 N Halsted in Lincoln Park, is BYOB and will serve pizza, plus a few sandwiches and salads every Thursday – Sunday. With room for 20, Paper Plane Pizza features a counter to post-up and eat, along with three high-tops and a couple four-top tables. 

Collectively, the owners have decades of experience in the restaurant + hospitality industry, from dishwashing to bartending and cooking, to managing and opening restaurants and bars of their own. During the pandemic, the guys decided it was time to team up, utilize their connections and launch a concept that would be 100% owner funded and operated. 

The boys can all agree that Paper Plane Pizza was built from the ground up. No investors, no outside partners. Just a bunch of industry vets doing what they love, making edible baked dough blankets. 

If anything, COVID gave the Paper Plane team time to make its dough – inspired by the hardworking City of Big Shoulders, it’s described as, “A solid slice with some good chew and pull to it. Definitely one-of-a-kind.” 

Pizzas are cooked at 610 degrees for a quick bake time. Toppings and ingredients will often come from locally sourced and seasonal partners. Prices start at $14 for a 12-inch pie and $22 for an 18-inch pizza. 

The pop-up plans on hosting ongoing community happenings, live music, art shows, tastings and private events. The Paper Plane Food Truck – decked out from Chicago street artist and tattooer Sir Clasik – will be hitting the road regularly giving Chicagoans a taste of the pie. It will also be available for corporate events, birthday parties, fundraisers and more. 

For now, the Paper Plane Pizza Pop-up will be open Thurs – Sun for dine-in and pickup, eventually offering delivery service. When the pizza runs out AKA “Last Dough”, that’s it for the day, you missed out. You can also pre-order the goods on Paper Plane’s website: www.paperplanepizza.com.  

Pizza fans can expect a permanent Chicago Paper Plane Pizza location to open early 2022. The Slice Shop at 3rd Street Market Hall in Milwaukee, WI will also open in the coming months.
