While summer heats up in Chicago, chilled seafood dishes will be in the spotlight on National Ceviche Day. From River North to Lincoln Square, area establishments will feature refreshing, citrus-cured fare on Thursday, June 28. 

Cantina Laredo in River North will offer discounted ceviche during happy hour on Thursday, June 28 from 3:30-6:30 p.m. Chef Damon Workman's ceviche features lime-marinated fish and shrimp with cilantro, green olives, avocado, and a touch of Cholula for $7.50 (regularly $10.75). 

Taco Joint's three locations (Lincoln Park; River North; The Shops at North Bridge) will feature ceviche tacos made with citrus cured white fish, lemon-serrano vinaigrette, avocado, cucumber and pico de gallo served on a crisp tortilla. The tacos, regularly $3.75, will be just $1.99 each on Thursday, June 28. Pair your handheld fare with Taco Joint's array of margaritas, ceverzas and tequila. 

Artango Bar & Steakhouse in Lincoln Square will offer $2 off the ceviche tasting trio from 5-11 p.m. on Thursday, June 28. Chef Saul Roman's Trio deCeviches features shrimp with leche de tigre, ahi tuna with avocado and huacatay sauce, and a special daily selection for $19 (regularly $21). Come for theceviche, and stay for live Latin music by guitar virtuoso Guillermo Paolisso from 7:30-10 p.m.
