Chef Mindy Segal has announced the debut of her newest venture – a custom chocolate line developed in partnership with Paris confectionary Cacao Barry, launching March 2024. Segal’s first foray into packaged chocolates, “Lait Extraordinaire” by Mindy’s Bakery is handcrafted in France.

Crafted from bean to bar with help from Segal’s team, the rich, dark, and intense 44.8% chocolate is the culmination of the group’s relationship with Cacao Barry. Following a trip to France in July 2023 where Segal and her head Chefs, Bo Durham and Karen Gizowski, developed the chocolate of their dreams after days of fine-tuning combinations in collaboration with the master team onsite, the end product was formed. The creamy, dark milk chocolate is a mixture of Mexico and Ghana origin, with notes of caramel, coffee, and dark brown sugar.

“The Cacao Barry team is obsessed with excellence in the same way we are, so we’ve been talking for years about teaming up,” says Segal. “After launching our bakery last year, it was time for us to develop the product we wanted to use in our pastries every single day. All I’m saying is that I’ve used a lot of chocolate in my life... this is the best there is.”

Lait Extraordinaire will come in 12-ounce packages available for sale at Mindy’s Bakery (1623 N. Milwaukee Ave.) and soon for national shipping.
