Key facts: Lawry's The Prime Rib Shakes Up Its Beverage Program, Launches Tableside Meat & Potato Martini
Lawry’s The Prime Rib has announced the launch of the tableside Meat & Potato Martini. Made with Chopin potato vodka and two colossal olives stuffed with horseradish and prime rib, it is the first cocktail to be served tableside at the steakhouse known for its prime rib carved tableside from silver carts. Newly acquired Beverage Director, Trevor Bierwirth, plans to accentuate the Chopin program with other seasonal offerings to be served with additional flair.
The Meat & Potato Martini ($15) leads a list of Chicago-centric cocktails, such as the McCormick Mansion and Chicago Sunset. Designed to blend with the restaurant’s tableside offerings, the cocktail joins other signature tableside items, including the Famous Roasted Prime Ribs of Beef and the Famous Original Spinning Bowl Salad.
The revamped beverage program also includes a partnership with Wisconsin-based Tyranena Brewing Company. Lawry’s collaborated with the brewery on a house craft beer inspired by the original uniforms the servers don. The Brown Gown Ale ($8) is a bourbon barrel-aged brown ale featuring notes of toffee and vanilla with 6% ABV.
