Lardon from Meadowlark Hospitality is celebrating its roots as an homage to Old World traditions with the launch of the French Wine Dinner Series on Tuesday, February 21st. With this series, the team will explore French cuisine through the lens of its most emblematic wine regions with monthly four-course, regionally-focused dinners by Executive Chef and Partner Chris Thompson, complete with wine pairings by Meadowlark Hospitality’s Beverage Director Abe Vucekovich. 

“In our early months, when Lardon served dinner, which we hope to do again this summer, we had a ton of French influence on the menu and I’m excited to explore that again with Abe as part of the process and dive deeper into more hyper-regional dishes,” says Thompson.

The first dinner in the series will focus on the Champagne region of France, best known for its fine-bubble-structure sparkling wine. To pair with the region’s claim to fame, Chef Thompson has imparted his own twist on some of Champagne’s traditional dishes. Menu highlights include Potee Champenoise, a braised pork stew, paired with Jeane & Rolland Piollot’s “Colas Robin” - a 100% pinot blanc extra brut in the family’s signature non-dosé style, as well as a butter-poached venison tri tip paired with a brut champagne by Ullens.

The series goes until June 2023, and as the weather warms, Lardon will pull inspiration from the more southern regions of France, incorporating ingredients better suited to warmer climates. In addition to Champagne, the series will explore the French regions of Loire Valley, Alsace, Burgundy, Bordeaux, and Rhone Valley. Dinners will fall on the second to last Tuesday of each month, and menus will be announced in the weeks leading up to every event.
