Honey Butter Fried Chicken Chefs Christine Cikowski and Josh Kulp have opened TriBecca’s Cubano in partnership with Chef Becca Grothe. The latest concept born out of their underground dining concept Sunday Dinner Club, the pop up at Revival Food Hall features Chef Grothe’s take on a Cubano sandwich. Her recipe includes local mojo roasted pork and cured ham, Wisconsin swiss cheese, house pickles, and chipotle mayo on an olive oil panino, pressed and grilled with mustard butter.
In addition to the Cubano sandwich, the pop-up serves sweet potato fries with mojo mayo, a griddled rum cake donut, a rum mojito on draft, and a pineapple ginger agua fresca. Guests also have the option to upgrade their sandwich with add ons like bacon, avocado, or Camchi Kimchi made in-house by Honey Butter Fried Chicken Chef de Cuisine Cam Waron.
“We tried to create some really flavorful items that work well for quick service but use quality local ingredients – locally-sourced ham and pork and pickles we make in-house. TriBecca’s Cubano will offer the same great service, food quality, and company values found at Honey Butter Fried Chicken,” says Chef Grothe.
