Hannah’s Bretzel, Chicago’s European-inspired sandwich restaurant, has partnered with chef and restaurateur, Rick Bayless, to launch the latest iteration of Hannah’s “Chef Series” sandwiches: The Puebla. The Puebla will launch in-person and for online ordering on Monday, September 21.
Named after Mexico’s historic state, Puebla, The Puebla by Rick Bayless pays tribute to the region’s culinary history, where chipotle stands center stage in the area’s cuisine. Made with hormone-free, range-raised Roasted Chicken, The Puebla uses the sandwich shop’s locally sourced ingredients to bring Chef Bayless’ global flavors to guests of Hannah’s Bretzel. The shaved chicken is then topped with a light and bright Baja Crema, Bayless’ signature chipotle salsa, Chihuahua cheese, avocado and cilantro, all sandwiched between Hannah’s house-made organic bretzel bread.
“I always say Puebla is the absolute land of the chipotle chiles; in fact, it's home to 6 distinct types.” says Chef Bayless. “You need a big, robust flavor to stand up to that beautiful, deeply browned, salty crust of a perfectly baked bretzel, and the chipotle's smoky-sweet flavor is just right for the job.”

It has been a pleasure working with him to craft this sandwich, and we are excited to share it with Chicago.”
As part of the Chef Series, Hannah’s Bretzel donates a portion of proceeds from the limited-time sandwich to a charitable partner. The duo landed on Chef Bayless’ non-profit culinary school: IMPACT Culinary Training. Created by Chef Bayless in partnership with ICNC, the program is designed as a training intensive for young, aspiring cooks. At IMPACT, students receive culinary education, including access to essential kitchen tools, one-on-one mentoring, and on-the-job training through paid internships.
The sandwich will be available for a limited time at all three Hannah’s Bretzel locations throughout the downtown Chicago neighborhoods, including River North and the Loop, as well as for delivery and catering.
