Footman Hospitality is pleased to announce that on January 21, 2015, their upscale tavern, The Betty, will open its doors in Chicago's Fulton Market District at 839 W. Fulton Street. The 5,000 square foot space will offer handcrafted cocktails; an extensive wine, craft beer and spirits list; and a sophisticated food menu, in Footman Hospitality's contemporary take on the neighborhood bar.

The interior of The Betty will be polished, yet approachable. The bold design approach by Chicago-based Studio K will showcase a rich color palate, contemporary features, reclaimed materials and ambient lighting, creating the ultimate salon for guests to imbibe. The space will be full of unexpected design elements and touches, including a custom made chandelier and shelves full of vintage treasures. The Betty's music will be played on vinyl, with a soundtrack hand-selected by the Footman Hospitality team.

Executive Chef of The Betty, Rachel Dow, created a sophisticated food menu that focuses on small bites and share plates, including Kampachi Crudo & Marinated Mussels, served with parsnip puree, kabocha chips, and peppercress; Warm Endive & Pear, with blue cheese, sourdough croutons, and a black garlic, brown butter vinaigrette; and Tikka Masala Braised Chicken Thigh, served with sweet potato, brussels sprout, yogurt, chicken chicharones, and naan.

The beverage program at The Betty, created by bar veteran Peter Vestinos, will be a blend of cocktails crafted with house made juices and syrups, a well curated back bar of fine spirits, small production wines with a European slant, and a variety of worldwide beer selections. The thoughtful offerings were created with the intention that guests can enjoy the selection at any time in the evening whether after work, throughout a meal, or as a nightcap.
