Latest update: Ever to Host Three-Night Chef de Cuisine Dinner Series in July
Just weeks after the Michelin Guide awarded third stars to Sonoma County’s Enclos and San Francisco’s Californios, the chefs leading these kitchens are heading to Chicago. Throughout July, Ever will host an exclusive three-night Chef de Cuisine Dinner Series, bringing together six chefs for one-night-only collaborative tasting menus. For diners, it’s an opportunity to experience the talent behind some of the country’s top kitchens, as well as two of the newest three-Michelin-starred restaurants, all without leaving Chicago.
The experience is $425 per menu with curated wine and spirit-free pairings offered with each. Guests who reserve all three dinners in the CDC Dinner Series will receive a 10% discount on the complete series. Presented in collaboration with OpenTable, San Pellegrino, Acqua Panna, and Hyatt House. Please note that seating for this event will be at shared tables.
JULY 14: ADAM GALE & GENOA PIERON
For the inaugural dinner, Chef Lucas Trahan and the Ever team welcome Adam Gale, Chef de Cuisine of the newly three Michelin-starred Enclos in Sonoma County, and Genoa Pieron, Chef de Cuisine of the two Michelin-starred Lazy Bear in San Francisco.
For one evening only, the chefs will present a collaborative tasting menu that reflects their individual culinary perspectives, techniques, and approaches to ingredient-driven cuisine. To complement the menu, guests will select either a wine pairing or a spirit-free pairing, each curated by the Ever beverage team to enhance the experience.

JULY 21: BRANDON DIENGER & LIAM MCLOUGHLIN
As part of Ever's CDC Dinner Series, Chef Lucas Trahan and the Ever team welcome Brandon Dienger of the two Michelin-starred Jônt in Washington, D.C., and Liam McLoughlin, Chef de Cuisine of the two Michelin-starred Restaurant Pearl Morissette in Ontario.
For one evening only, the chefs will collaborate on an exclusive tasting menu showcasing the techniques, influences, and culinary philosophies that have shaped their respective kitchens. To complement the menu, guests will select either a wine pairing or a spirit-free pairing, each curated by the Ever beverage team to enhance the experience.

For the final dinner in Ever’s CDC Dinner Series, Chef Lucas Trahan and the Ever team welcome Emilie Van Dyke, Chef de Cuisine of the two Michelin-starred Emeril’s in New Orleans, and Kaylin Lloyd, Chef de Cuisine of the three Michelin-starred Californios in San Francisco.
Together, the chefs will present a one-night-only tasting menu that brings their distinct perspectives, techniques, and culinary influences together for an evening available exclusively at Ever. To complement the menu, guests will select either a wine pairing or a spirit-free pairing, each curated by the Ever beverage team to enhance the experience.
