Edie’s All Day Café & Bar (Edie’s) is set to open its second location in the former 3 Greens Market space (354 W. Hubbard Street) in the Spring of 2022. The first Edie’s All-Day Café & Bar, located in the Wells corridor of Chicago’s River North neighborhood (675 N. Wells), opened during the height of the COVID-19 pandemic in August 2020.

Founded by hospitality veterans Matt Matros, Arturo Gomez, and Chef Partner, Chris Dunstatter, Edie’s was the first to lead Chicago’s “third place” – designated space between work and home – a new wave in hospitality deeming itself as a blend of café, restaurant, workspace and wine bar.

“We wanted to create something new with Edie’s where people could come meet, work, create and also enjoy what we believe are great food and beverage options throughout the day and into the evening,” says Edie’s co-founder, Arturo Gomez. “The idea that you could get an amazing cup of coffee, enjoy some great food options and end the day with a glass of wine was a perfect combination in my opinion. The community response over the last year has been tremendous, and we are excited to have been given the opportunity to expand the concept into another amazing pocket of the River North neighborhood.” 

Guests visiting the second location can expect the same functional gathering space, with globally inspired food and drink menus. Items like the charcoal latte, Edie’s Mexi-Bowl, pitaya colada smoothie, trufflelicious flatbread and more will be available, with the addition of some fresh, new menu items. The West Hubbard café will also feature a full-service coffee bar, as well as beer, wine, and spirits, similar to the original location.

Leading the interior design is Variant Collaborative – a female-led creative design studio who’s fronted projects such as Pacino’s (South Loop) and Aba (Austin, TX). The Variant team plans to take a fresh approach to Edie’s modern, Bohemian-influenced space, while keeping in tow with the overall bright, atmosphere the original location has.

While an exact opening date is still being identified, the Edie’s team plans to open the doors in Spring 2022, with similar hours to the original location – seven days-per week, serving breakfast, lunch, and dinner.
