Chef Rodolfo Cuadros from Don Bucio’s Taqueria is partnering with Chicago’s chefs for special Taco Tuesday collaborations all summer long. Diners will get to try tacos inspired by the collaboration during select Tuesdays in summer. Participating chefs include Chef Bill Kim from Urbanbelly, Chef Manny Mendoza from Herbal Notes, Chef Rudy Oliveros from El Ideas and more. Diners can expect taco inspirations ranging from Korea and Italy down to Colombia and Mexico. 

The limited-time chef collabs will only be available on select Tuesdays through August 22. The tentative schedule is as follows: 

  • June 13: Chef Yari Vargus from Casa Yari

  • June 27: Manny Mendoza from Herbal Notes

  • July 13: Chef Dudley Nieto from Fat Rosie’s Group

  • July 27: Chef Rudy Oliveros from El Ideas

  • August 8: Chef Mark Sparacino from Prosecco

  • August 22: Chef Bill Kim from Urbanbelly
