As the weather thaws out and Midwesterners crave tropical warmth and flavors, third-generation restaurateur, long-time Chicagoan, Mexico native, and noted designer Adolfo Garcia is bringing his Diver food and beverage concept from Mexico, Malibu, and Downtown Chicago to Downtown Highland Park (1850 N. 2nd Street, Highland Park, IL 60035). 

Diver Cantina on the Shore offers traditional family recipes presented in a modern twist from beachside towns found in Mexico.  

“This is not your ordinary Mexican street food,” states Garcia who transitioned his former Summer Inn space into Diver Cantina on the Shore to honor his culinary roots while addressing another restaurant name confusion.

“I chose to bring a restaurant concept to Chicago’s North Shore and didn’t want anything to stand in the way of offering my exquisite culinary creations and cocktails to this fabulous community,” says Garcia. Reservations are being taken now and their official grand opening is March 22.

THE MENU

This Mexican restaurant and bar offers a full menu of fresh ingredients where the traditional family recipes are presented with a modern twist from beachside towns in Mexico including Tulum, Sayulita and Baja. The menu offers south of the border seasonal ingredients infused in light dishes and cocktails.

Diver Cantina on the Shore offers a happy hour Tuesday-Saturday from 4-6 pm, weekend brunch and daily lunch and dinner menu as well as daily specials including: Taco Tuesday ($3 a la carte tacos mix and match and $6 Mexican beers), Wine Down Wednesday (1/2 bottles of wine and kids under 12 accompanied by an adult eat free), Thursday 1/2 off pitchers of Sangria and ceviche. THE PATIO

The three-season outdoor wrap-around patio space (1,355 feet) features fire pits, boho rattan lighting, a white marble bar. Floor-to-ceiling drapery, pergolas, and lush greenery will be present throughout the space. Table options include communal dining, private tables, and lounging high and low tops.

THE SPACE & PRIVATE EVENTS

Diver Cantina on the Shore’s private dining and events are open for bookings. The space, created and designed by Adolfo Garcia and Katherine Rosecrans from Defined Societies includes private rooms, interior and outdoor options that include audio, video, greenery, and high-style coastal bungalow decor.

The Diver Cantina on the Shore has three options to host events.

• The Bungalow - Capacity: 24 - This completely private space offers communal dining with a large table or multiple tables that seat 4-6. Guests can choose their music and use the TV (hidden) or projector for presentations or special videos. The room features greenery, boho lighting, and coastal decor. This space can be expanded for larger parties into The Study.
• The Lookout - Capacity: 48 - Design highlights include classic bungalow-style shutters surrounding the space, a private entrance, a view of the outdoor patio, and french doors. Seating options range from long communal tables to separate dining tables ranging from 4-6 seats per table.
• Interior & Exterior Buyout - Capacity: 175 Interior / 100 Exterior - Design highlights include interior and exterior wrap-around Carrara marble bar, elegant beachside bungalow lighting, and a feeling of being immersed in greenery. Oversized club-style chairs, bar stools, lounge seating, and high-end style complete the coastal getaway feel.

Additional table options throughout the space include communal dining, lounging high and low tops, a chef’s table option for special occasions ($750 minimum) and complete restaurant booking for up to 175 inside/100 outside.
