A closer look: Daeji Dough Co. Teams Up With HIS Hospitality Group on Korean Salt Bread Drop

The Korean husband-and-wife team behind HIS Hospitality Group—operating Omakase Yume, TenGoku Aburiya, and Bonyeon—has teamed up with Daeji Dough Co., the bakery that grew from a farmers market into a social media force behind tteokbokki-topped croissants, to launch a sweet Korean treat. 

Created by Daeji Dough Co.'s Albert Song and HIS Hospitality’s Executive Pastry Chef Alana Wang, the two pastry pros have reimagined a traditional Korean salt bread, a bakery staple known for its soft, buttery interior and lightly salted crust. The result is the Boricha Soboro Salt Bread Filled with Corn Diplomat Cream, featuring roasted barley tea flavors, a crisp soboro topping inspired by Korean bakery traditions, and a sweet corn diplomat filling.

Chicagoans will be able to sink their teeth into the creation both at TenGoku Aburiya’s all-you-can-eat brunch on Saturdays and while supplies last at Daeiji Dough Co. for two weekends only: June 20–21 and June 27–28.
