Cochon555 has added more names to their chef lineup. Top barkeeps and celebrated somms will take part in the competition to find one chef who will be crowned for their whole pig cookery skills. The event, set to take place in Chicago at Morgan Manufacturing, offers guests a way to sample food cultures near and far, putting the focus on a safer, more honest food system. National in scope, the culinary tour will go to 9 cities in 2019. The event also benefits a greater cause in the form of Piggy Bank, a farm-in-the-making devoted to sharing free heritage breed genetics with small family farms. For an in-depth look at the Cochon555 movement, watch the spotlight video, and to purchase tickets, visit the link HERE.

This year’s competing chefs include Chef Cory Morris of Nacional 27, Jake Chappell of Vincent, Chris Thompson of Coda di Volpe, Brian Enyart & Jennifer Jones Enyart of Dos Urban Cantina, and Daniel Espinoza of Cantina Laredro. The chefs prepare lavored dishes in this friendly competition using whole heritage breed pigs from family farms in a nose-to-tail, whole animal showcase. A crowd of a few hundred pork-loving gourmands and fourteen notable judges will score each chef on utilization, global influences, cooking techniques, overall flavor, and the “best bite of the day.” All-star butcher, Rob Levitt of The Butcher & Larder / Local Foods, will also be in attendance as the headline butcher.

Running in tandem with tour are a pair of internal beverage competitions, celebrating both wines and spirits. Punch Kings presented by El Tesoro Tequila (video), features five of the city’s top barkeeps facing off in a whole-bottle punch bowl competition, challenging them to each make a large-format communal libation prepared with El Tesoro Tequila. Confirmed competitors this year are Javier Arroyo of Bar Sotano,  James Urycki of Travelle at the Langham Chicago and Nigal Vann of Apogee. Cochon555 also challenges five sommeliers in the fourth annual “Somm Smackdown” (video) to use every bit of their accumulated knowledge and inspiration to find the best wine to pair with the dishes prepared by competing chefs. This year’s somms include Jon McDaniel of Second City Soil, Rebekah Graham of Twain, Jillian Riley of NoMi, Rebekah Mahru of City Winery, Amy Lutchen of Del Frisco’s.

Notable appearances will also be made by Greg O'Neil of Pastoral Artisan Cheese, hosting the signature Cheese Bar, Chef Ce Bian or Roka Akor, hosting the the Surf & Turf Tartare Bar and Chef Amber Lancaster of Sable Kitchen & Bar, hosting the Veggie Bar. Pastry chef, Vanarin Kuch of The Albert, will also be crafting innovative desserts all night.
