Clever Rabbit has opened its doors in Wicker Park - a contemporary American restaurant with a focus on fresh, seasonal vegetables, as well as thoughtfully sourced meats and seafood. Chef Matt Lair’s “root to leaf” approach uses vegetables in their entirety and is his take on familiar flavors. The menu is divided into four sections including: Salads, Vegetables, Plates, and For the Table (along with a children’s menu upon request). Clever Rabbit’s menu highlights include:
- Carrot Dumplings: Roasted Carrots, Ginger, Herbs, Honey
- Chinese Broccoli: Salt + Pepper Tofu, Fermented Black Beans, Citrus
- Crudité Platter: Raw + House Pickled Vegetables, Ramp Conserva, Smoked Mushroom Mousse, Eggplant Agridolce, Summer Truffle, Hemp Seed Naan
Meat lovers need not fear, as the menu also hosts a wealth of seafood options like a Cold Smoked Shima Aji (Mackerel, Pimenton, Kumquat, Manzanilla, Sherry), Scallop Schnitzel, and Salmon (Juniper Poached Salmon, Roasted Heirloom Carrots, Olivada, Capers); as well as proteins like a Half Roasted Chicken and a Double Cheeseburger, named The Fat Rabbit.
Clever Rabbit Partner Nick Pagor will oversee the beverage program, which will have a focus on wine, including rosé ice cubes to keep glasses chilled in the restaurant’s outdoor patio. Clever Rabbit will also have a ten taps dedicated to craft beer and ciders, as well as a cocktail program that will mirror the food menu - expect ingredient combinations, like a Carrot Margarita with Sage and a Matcha Gin and Tonic.
