Don Bucio's Taqueria x Taqueria Chingon x Herbivore

Chef Rodolfo Cuadros of Don Bucio’s Taqueria is collaborating with Chef Max Musto of Herbivore and Taqueria Chingon’s Chef Andrew Celestina for a Cinco de Mayo taco showdown, each chef offering their own take on plant-based tacos. The tacos will be served at Don Bucio’s Taqueria in Logan Square on Cinco de Mayo, May 5. A percentage of proceeds raised during the event will be donated to Casa Central, the largest Hispanic social service agency in the Midwest offering programs for children, adults, and seniors, following the Cinco de Mayo celebration.

Executive Chef Gustavo Ocampos and Chef Rodolfo Cuadros plan to serve up a Daikon Lengua Guisada for the taco showdown, packed together on a hand-press blue corn tortilla with salsa macha, lime, pickled onions and cilantro.

“We wanted to do something special this year for Cinco de Mayo,” said Cuadros adding, “Max and Andrew are two of my favorite chefs, and both do such exciting things at Herbivore and Taqueria Chingon. Going fully plant-based for our showdown is our way to offer something delicious to everyone, but more importantly, help out our neighbors in need with each taco you get on the holiday.”

Chef Max Musto of Herbivore has created a Korean Beef Bulgogi for the Cinco de Mayo celebration. The taco comes in a corn tortilla and is filled with slaw and spicy aioli.

Chef Andrew Celestina represents Taqueria Chingon for the showdown, and he’s serving his special Sweet Plantain taco on a fresh-pressed corn tortilla. The taco brings the heat with serrano chimichurri and is filled with coconut taro root purée and taro root tostones.

All diners have to do is order one of each taco, head to social media and declare this year's taco showdown winner. On top of the taco showdown, diners can take advantage of Don Bucio’s Taqueria’s late night Happy Hour with 50%-off margarita pitchers every Friday and Saturday from 9:30-10:30 pm.
