Chef & Partner Paul Kahan, his One Off Hospitality partners Donnie Madia, Eduard Seitan, Terry Alexander and the team at The Publican restaurant bring together Chicago’s restaurant industry for a one-night-only oyster shucking marathon…all in the name of charity.

On Wednesday, February 21st, 2024, The Publican team gears up for another night of charitable oyster-filled action. Guests can select $2-a-shuck oysters and drink specials at the Fulton Market beer hall, as the city’s chefs jump behind an eight-foot “oyster boat” with Kahan to shuck things up. Each chef runs the shuck show for an hour at a time, between 5 – 9 p.m., banding together to raise funds for Pilot Light, an organization whose mission is to educate and inspire students to be changemakers for an equitable, sustainable, and accessible food future. 

Oysters are by Island Creek Oysters–with drink specials by Krombacher International, Bardstown Bourbon Company, Green River Distilling Co and special guest bartender Sam Parrie of Milk Room serving up a signature cocktail, specifically crafted for this event. 

2024 Publican Shuck Off Lineup:

·      5 p.m. – Mindy Segal (Mindy’s Bakery)
·      6 p.m. – Kaleena Bliss (Chicago Athletic Association/Cindy’s)
·      7 p.m. – Joe Frillman & Leigh Omilinsky (Daisies)
·      8 p.m. – Chef Sarah Stegner & The Chicago Chefs Cook Team
·      9 p.m. – Jonathan Zaragoza (Birrieria Zaragoza)

Walk-ins and bar tables are available, but reservations can be secured on Tock. Full dinner and drink menu will be served in addition to the special $2 oysters. Each ticket will require a non-refundable deposit of $20 that will be donated entirely to Pilot Light with special merch available for sale on site,
