Chef Bill Kim and Cornerstone Restaurant Group has announced a new creation on the menu at Chef Bill Kim’s Pizza & Parm Shop: the Pizza Sandwich.
Using a quarter of a Detroit-style pizza as the ‘bread,’ the Pizza Sandwich offers a handheld solution for eating pizza at lunchtime or on-the-go. The pizza itself is similar to focaccia bread—and the sandwich is made much like a reversed pizza by using the traditional toppings of tomato sauce, brick and pecorino cheeses as the fillings. Guests can build their own sandwich starting at $8, then add in their choice of protein such as fried chicken, pepperoni or smoked pork, or vegetarian choices like arugula, mushrooms and ricotta.
“Like some of the best inventions, the pizza sandwich happened organically. It started when we made a version of it for our staff meal—everyone was laughing because it was so delicious,” remarks Kim. “It’s something new that we’ve never done before, but it makes so much sense!”
Chef Bill Kim’s Pizza & Parm Shop is located in Chicago’s Wicker Park neighborhood at 1542 N. Damen. Delivery is available through Caviar and DoorDash.
