Reader brief: Charity Shuck Off Brings Gus’, Bar Bambi, Radicle, Delilah’s + MORE Together at The Publican for ONE NIGHT ONLY, April 8th

Partners of One Off Hospitality, Paul Kahan, Donnie Madia, Terry Alexander and Eduard Seitan return this year to host the fifth annual charity Shuck Off on Wednesday, April 8th, at The Publican. Packing the house year after year with the city’s best guest chefs who join Chef Paul Kahan at the oyster boat to shuck $2 oysters throughout the night, this year the team is changing up guest shuckers to feature Chicago’s most celebrated bar stars.

From 5pm-10pm your favorite bars and beverage stars throughout the city will help One Off Hospitality partners raise money for Pilot Light, a nonprofit dedicated to educating and inspiring students to become change makers for an equitable, sustainable, and accessible food future. Each bar star will also have a cocktail featured on the menu for one night only, allowing guests to try drinks from some of the best bars and beverage pros in town under one roof.

2026 PUBLICAN SHUCK OFF LINEUP

  • 5 pm - 5:50 pm: Kyle Davidson (Bar Tutto): Kyle is the beverage director at Bar Tutto, named one of Eater’s Best New Restaurants in Chicago, where he specializes in crafting cocktails using Italian amari. Bar Tutto is part of Day Off Group.
  • 5:50 pm - 6:40 pm: Nicole Yarovinsky (Daisies/The Radicle): Nicole directs the beverage programs at the recently opened The Radicle and Daisies.
  • 6:40 pm - 7:30 pm: Katie Renshaw (Bar Bambi): Katie is the owner-operator of the newly opened Bar Bambi.
  • 7:30 pm - 8:20 pm: Abe Vucekovich (Friends of Friends): Abe built the bar program at Meadowlark. 
  • 8:20 pm - 9:10 pm: Scott Kitsmiller (Gus’ Sip & Dip): Scott is the AGM of Gus’ Sip & Dip.
  • 9:10 pm - 10 pm: Ian Buchanan (Delilah’s): Ian handles operations for Delilah’s and has helped the bar build one of Chicago’s most serious whiskey collections, with more than 800 bottles. 

Limited spots for walk-ins and bar tables will be available, but you’ll want to secure a reservation for this event via OpenTable. The full à la carte dinner and drink menu will be served in addition to the $2 oysters and specialty featured cocktails. Each reservation will require a non-refundable $20 per person deposit, which will be donated entirely to Pilot Light. And special merch will be available for sale on-site!
