A closer look: The Bougie Foodie Opening in Fulton Market

The Bougie Foodie will open its first location outside Texas in Chicago this April. The shop will be located at 210 N. Carpenter St. in the Fulton Market/West Loop area. The business was founded by pastry chef and entrepreneur Brianna Cryar.

The Chicago location will offer cookies, dessert bars, and bread pudding prepared in small batches throughout the day. The concept centers on serving desserts during extended hours, including evening service.

“When I moved to Austin, I realized there weren’t any local bakeries open at night,” said Cryar. “I wanted a place where people could stop by after dinner for a warm cookie or decadent dessert. Chicago felt like the perfect city for that same experience, and it's somewhere I've wanted to live for a while now, so I moved up here and am looking forward to sharing our sweet treats with everyone in the area. Every item we offer is still made from scratch in small batches to preserve quality and flavor.”

The business launched in January 2023 in Austin, TX as a pickup and delivery operation based out of a shared commercial kitchen. It later expanded through markets, pop-ups, and a mobile trailer before opening a permanent storefront.

Menu items at the Chicago location will include a chocolate chip cookie made with semisweet chocolate, bread pudding prepared from a family recipe and served with brandy sauce, and rotating cookie flavors. Additional offerings will include items such as tiramisu and cinnamon rolls on a rotating basis.

The bakery produces items in multiple batches during service rather than a single daily bake cycle. Cryar operated the business while working in digital marketing before transitioning to the company full time in 2025.
