A closer look: The Bougie Foodie Opening in Fulton Market
Texas-born dessert shop The Bougie Foodie is expanding beyond the Lone Star State for the first time with a new Chicago location opening this April in the Fulton Market/West Loop neighborhood at 210 N. Carpenter St. Founded by pastry chef and entrepreneur Brianna Cryar, the dessert shop has built a following for its oversized cookies, scratch-made dessert bars, and its signature family-recipe bread pudding (using her grandmother’s original recipe).
The Chicago location will bring the brand’s signature “fresh-baked-all-day” approach to the city, offering warm cookies, bread pudding, and specialty desserts into the evening, something Brianna originally created the concept around when she couldn’t find late-night dessert options herself.
“When I moved to Austin, I realized there weren’t any local bakeries open at night,” said Brianna. “I wanted a place where people could stop by after dinner for a warm cookie or decadent dessert. Chicago felt like the perfect city for that same experience, and it's somewhere I've wanted to live for a while now, so I moved up here and am looking forward to sharing our sweet treats with everyone in the area. Every item we offer is still made from scratch in small batches to preserve quality and flavor.”
Brianna launched The Bougie Foodie in January 2023 out of a shared commercial kitchen in Austin, offering pickup and delivery only. The brand quickly gained traction through farmers markets, pop-ups, and social media before expanding to a dessert trailer and eventually a brick-and-mortar on South Congress. Now, loyal customers will sometimes drive hours across Texas to enjoy the shop’s signature desserts.
Among the menu highlights coming to Chicago:
Choco Chip Cookie Mountain – A six-ounce gourmet chocolate chip cookie packed with premium Guittard semisweet chocolate chips and baked to achieve a crisp exterior and gooey center.
Mimi’s Boozy Bread Pudding – Brianna’s grandmother’s recipe served warm with a rich brandy sauce.
Rotating Cookie Mountain flavors – New monthly creations and seasonal specialties.
Weekend specials – Including classic tiramisu and brioche cinnamon rolls dunked in a brown butter glaze.
Unlike many bakeries that bake once daily, The Bougie Foodie produces cookies and bars in small batches throughout each shift so desserts are always served warm and fresh. Brianna built the business while working full-time in digital marketing for nearly three years, running advertising campaigns during the day and baking through the night. In October 2025, she left her corporate career to focus on the shop full-time and expand the brand nationally as she had found her passion.
The Chicago opening marks the first expansion outside of Texas and represents the next step in Brianna’s vision to bring high-quality desserts to more cities across the country. Corporate and special event orders are also welcome.
