South American The Loop

The South American-inspired rooftop in the Loop, Boleo, has announced the appointment of Chef de Cuisine Franklin Perdue.

Franklin Perdue

Chef de Cuisine, Boleo

Born and raised in Saint Charles, Illinois, Chef de Cuisine Franklin Perdue brings more than 13 years of experience to Boleo, a South American-inspired rooftop lounge atop the 15th floor of The Kimpton Gray Hotel in the Loop’s Financial District.

Chef Franklin’s interest in culinary arts started at a young age. Some of his favorite childhood memories involve meal-planning, grocery shopping and cooking family dinners with his father. Chef Franklin credits the time spent alongside his father as fostering his passion to become a professional chef.

Prior to joining Boleo, Chef Franklin spent nearly half of his life in various kitchens throughout Illinois, including training at Michelin-starred restaurants in downtown Chicago. As Chef de Cuisine of Boleo, Chef Franklin draws inspiration from his fine dining experience and passion for reading the latest culinary trends. He enjoys infusing global flavors into traditional dishes to offer a more modern flare.

Chef Franklin resides in the Glencoe suburb of Chicago. In his spare time, he enjoys spending time with his two daughters, hitting the gym and frequenting the many nature preserves and parks in Illinois.
