Bambola, (1402 W. Randolph St.), from Bonhomme Hospitality, launches Brunch on Saturday, November 5 with entertainment, a new menu exploring European and Asian influences, all paired with new cocktail and natural wine programs.
Opened mid-September 2022, Bambola is a 175-seat restaurant and cocktail bar that tells the story of trade, travel and culture inspired by the rich traditions, ancestral techniques, products and spices widely exchanged and mastered by Eastern and Western cultures since the 13th century. Led by Chef de Cuisine Alisha Elenz and Bonhomme Group’s Michelin-starred Executive Chef Marcos Campos, Executive Pastry Chef Shannah Primiano and Culinary Director Erwin Mallet, with the debut of the new Brunch menu guests can expect a selection of savory and sweet options that play on the culinary through lines in the shared multicultural heritage of Asia and Europe.
Bambola’s Brunch Winter Preview Menu features dishes created with the flavors found along the Silk Road. As the journey goes from East to West and West to East, new savory Brunch items include the Polenta & Mushrooms, a Polenta Cake with Soy Brined Egg Yolk Center, Braised Mushrooms, Watercress, and Pomegranate Molasses; Vietnamese Pork Belly Sandwich with Pickled Vegetables, Golden Raisin Hot Sauce and Citrus Mayo; Breakfast Gnocchi with Cantonese Style Bacon, Miso & Roasted Garlic Butter, Smoked Tomato, Sous Vide Egg and Thai Basil; Wood Smoked Salmon Borek with Josper Hot Smoked Salmon, Chive Infused Farm Cheese, Phyllo Sheets, Pistachio, Fried Capers & Lemon; and Saffron Fried Rice with Smoked Pork Shoulder, Mirin-Glazed Eggplant and a Fried Egg.
Paired with Chef Marcos and Alisha’s savory menu are Sweet Brunch dishes by Chef Shannah, who finds inspiration in the Turkish, Persian and Indian cuisines that play a central role in Bambola’s menu as these three countries dominate the center of the Silk Road. As evidenced by her new dishes including the Cardamom French Toast Cardamom French Toast with Turkish Coffee, Roasted Banana, Date Syrup and tahini whipped yoghurt; Cinnamon Roll with Chai Sticky Sauce, Cream Cheese Glaze, Turkish Apricot & Persimmon Preserves; and Baklava Croissant with Almond Frangipane, Sugared Walnuts, Cranberry & Pomegranate Compote.
New Brunch cocktails from Partner Brian Sturgulewski include the Szechuan & Orange, Bambola’s version of a Bloody Mary featuring Vodka, Orange Zest, Szechuan Pepper, Galangal, Hoisin, Tomato and Lemon; Coconut with Mezcal & Aperitif Wine, Coconut, Yuzu Ponzu, Green Sansho, and Lemon; Pistachio with Scotch Whisky & Amaro, Hot Vanilla Chai, Honey, and Salted Pistachio Cream; and the Date, a hot cocktail with Bourbon & Reposado Tequila, Hot Coffee, Smoked Tea, Date, Fresh Whipped Cream and Black Cardamom.
