Chef Michael Lachowicz will reprise some of his recipes on the menu at Aboyer – his newly renovated, classic French Brasserie in Winnetka – for a three-month culinary series highlighting three classic preparations for a limited time.
The Chef Lachowicz Signature Series will showcase dishes that have remained in Lachowicz’s repertoire for over three decades. Each French preparation is created with his French-trained culinary style at the forefront.
Chef Lachowicz Signature Series will run November 2022 – January 2023:
November 1– 30 Chef Lachowicz Signature: Roasted Saddle of New Zealand Venison
Roasted and served with Sweet Potato Gratin, Chestnut Puree, Roasted Baby Turnips, and Sauce Myrtilles. ($48)
December 1 – 31 Chef Lachowicz Signature: Grilled Quail
Grilled and stuffed with Foie Gras & Truffle Risotto, served with Sauce Perigueux ($44.00)
January 1- 31 Chef Lachowicz Signature: Soupe de Poisson
A melange of Lobster-filled Loup de Mer Roulade, Prince Edward Island Mussels, Littleneck Clams, Shrimp and Chanterelle Mushrooms, all bathing harmoniously in a savory, Classic Bouillabaisse Style Broth topped with a Saffron Rouille Crouton. ($48)
