The Albert, located in Hotel EMC2 at 228 East Ontario, has announced the appointment of Executive Pastry Chef Allison Schroeder. Bringing over 9 years of experience to the property’s contemporary restaurant, Chef Allison, formerly of Bellemore, will combine her culinary experience on the Chicago food scene with the Albert’s vision to create a pastry menu.

“We are excited to welcome Chef Allison to the Albert,” said Executive Chef Larry Feldmeier. “Chef’s exemplary experience in the culinary industry and expertise in creating stand out pastry programs is something that we are excited to introduce our guests and team to.”

Chef Allison will integrate a lineup of seasonal pastries that are consistent with Chef Larry’s vision for the Albert and a reflection of her background in the industry. In addition to developing the signature dessert menu, she will add a bread program, mignardises, intermezzos, and special occasion items into the offerings for the restaurant, as well as create new amenities for the hotel.

“I hope to develop a pastry program for guests of the Albert that combines some of my top performing desserts from my previous experience on the Chicago pastry scene with new, innovative items,” said Executive Pastry Chef Allison Schroeder. “I have always been someone that is open to a challenge and am excited to integrate this mentality into my pastry program here.”

Executive Pastry Chef Allison Schroeder comes to the Albert with a veteran background in the culinary industry, having most recently served as the opening Pastry Chef at Bellemore. A native of Woodstock, Chef Allison began her career as a Pastry Sous Chef at Blackbird. She then moved to Girl & the Goat, where she served as a Pastry Cook. Following this, she worked as a Pastry Assistant at Sepia and then as a Pastry Cook at Trump International’s Sixteen.
